Capsicum annuum: specie suffruticosa perenne coltivata come annuale. Presenta fusti eretti e foglie ovali, picciolate, di colore verde scuro. Da giugno ad agosto produce piccoli fiori semplici di colore bianco ai quali faranno seguito i frutti di colore e dimensioni variabili a seconda della varietà. Se ne conoscono con frutti eretti o pendenti, conici o sferici, lisci o grinzosi, lunghi da 2 a 20 cm, di colore verde, giallo o rosso. Le varietà più importanti derivano da due varietà botaniche: C. annuum acuminatum e C. annuum cerasiforme. La prima dà origine a un gruppo di piante alte dai 40 ai 60 cm, con frutti conici, eretti, di colore rosso e lunghi fino a 15 cm. A questo gruppo appartiene il “Peperoncino Lungo di Cayenna”. Dalla seconda varietà deriva invece un gruppo di piante alte da 20 a 40 cm al quale appartengono anche i cosiddetti “Peperoncini ornamentali nani”. Questi presentano frutti conici che assumono una colorazione dapprima verde e successivamente gialla, arancione e rossa. Spesso sulle piante sono presenti frutti di diversi colori. Esistono due varietà a frutti sferici: “Ciliegia rosso” e ”Ciliegia giallo”.

Capsicum fructescens: specie arbustiva che raggiunge altezze variabili dai 20 ai 150 cm. Pur essendo perenne, viene coltivata come annuale. Le specie più piccole vengono coltivate in vaso, mentre quelle di dimensioni maggiori vengono tenute in piena terra. I fiori, di colore bianco, si formano all’estremità dei fusti e sono seguiti da frutti di forma conica (in quasi tutte le varietà) e colore bianco, giallo o rosso. Nella maggior parte delle specie, sono commestibili e molto piccanti.

Ibridi: sono stati ottenuti dall’incrocio delle due specie precedenti.
- Bonfire: presenta piccoli frutti di colore prima verde, poi giallo e, in fine, rosso.
- Ciliegia rosso e ciliegia giallo: sono chiamati così per la forma tondeggiante e i colori dei rispettivi frutti.
- Fips: questo ibrido presenta frutti che da verdi diventano arancioni e poi rosso scuro.
- Fiesta: presenta frutti eretti, di forma conica che presentano un colore crema iniziale, che vira successivamente verso il giallo e l’arancio, per terminare con il rosso.
